It is made mainly from Palomino, the classic grape of the region, with a smaller part of Arinto, a Portuguese variety known for bringing freshness and acidity. The wine comes from albariza soils around Sanlcar de Barrameda, which help shape its salty, mineral side. The grapes are crushed by foot, left briefly with the skins, then pressed as whole bunches.
